Goat Cheese Brownies with Raspberry Drizzle

Ah, brownies! Everyone's favorite dessert because of how versatile they are. Have 'em plain or with ice cream, with a dollop of whip cream or better yet, with a creamy layer of goat cheese. Let's make some goat cheese brownies, yeah?

Ingredients
  

For the brownies

  • 1 cup unsalted butter 2 sticks
  • 4 oz semi-sweet chocolate
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs room temperature
  • 4 oz goat cheese
  • ½ cup all-purpose flour
  • ½ tsp salt
  • ½ cup unsweetened cocoa powder

For the goat cheese layer

  • 4 tbsp unsalted butter room temperature
  • 8 oz goat cheese
  • cups powdered sugar
  • 1 tsp vanilla extract

For the drizzle

  • melted chocolate
  • raspberry jam

For the brownies

  • Preheat oven to 325°F and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides to lift the completed goat cheese brownie out. In a bowl, sift together the flour, cocoa, and salt. Set aside.
  • Melt the butter and chocolate together and mix until combined. Add the granulated sugar and whisk until smooth. Allow the chocolate to cool to room temperature before continuing.
  • Add the eggs one at a time, whisking well after each addition until your batter is thick and shiny— about 2 minutes. Whisk in the goat cheese and vanilla, until there are no clumps or pieces.
  • Finally, whisk the flour mixture into the batter until everything is combined. Pour the batter into the prepared pan and bake for around 40-45 minutes or until a toothpick inserted into the center comes out clean. Remove from pan and allow to cool completely on a wire rack.

For the goat cheese layer

  • In a bowl, beat together the butter, goat cheese, and vanilla extract with a hand mixer until light and fluffy. Add the powdered sugar and beat on low speed until everything is incorporated— about 1 to 2 minutes.
  • When the brownie base has cooled, spread the goat cheese layer evenly on top. Refrigerate for about half an hour.
  • Remove the set goat cheese brownies from the refrigerator and cut into desired pieces. Drizzle the melted chocolate and raspberry jam on top before serving!
