In a large plate, whisk together the flour, paprika, black pepper, and salt. Dredge both sides of the chicken breasts in this.
Next coat the chicken in the beaten egg.
Finally, coat the chicken in the cornflakes. Drizzle some oil on top and air fryer at 375F for about 10 minutes or until the chicken registers 160F internally.
Set aside to cool.
Mango Sauce:
Peel and slice a mango into chunks. Add to a blender with the water and blend until smooth.
To a medium saucepan over medium-high heat, add the pureed mango, minced garlic, minced ginger, chili powder, turmeric, olive oil, cardamom, cloves, lime juice, and honey. Cook for about 5 minutes or until fragrant, then remove from heat.
With a tong, coat both sides of the fried chicken in the mango sauce. Cut into strips and enjoy with a bowl of sticky rice or in a sandwich!
