Orange Upside-Down Cake
This orange upside-down cake is a cozy twist on the classic! The earthy warmth of cardamom combines perfectly with the bright, zesty orange, giving each bite a lovely balance of spice and citrus. With its caramelized top and soft, moist texture, it’s the kind of cake that feels comforting and special all at once—perfect for any time you need a little sweetness in your day!
Base:
- 1 large orange cut into thin slices
- 2 tbsp butter melted
- 3 tbsp brown sugar
Cake:
- ⅔ cup granulated sugar
- 2 large eggs
- ⅔ cup olive oil
- ½ cup yogurt
- 1 tsp vanilla
- ¼ cup orange juice
- zest of 1 orange
- 1⅓ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp cardamom powder
Preheat oven to 350°F and grease a 9 inch springform pan, line the bottom with parchment paper. Slice oranges into ⅛ inch rounds and set aside.
Add melted butter to the springform pan and swirl to coat the bottom of pan. Sprinkle sugar evenly over the bottom then place the orange slices over the sugar, set aside.
In a large bowl, rub the orange zest into the sugar, then add the eggs and beat until thick and light in color. Whisk in the olive oil, yogurt, vanilla, orange juice, and mix until smooth. Whisk in the flour, cardamom powder, baking powder, baking soda, and salt.
Pour batter into prepared pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool for at least 10 minutes before slicing.
