Spiced Date Cake
Infused with cloves and cinnamon, this spiced date cake is the perfect dessert for when you want something comforting. Sit back in your favorite chair, with a warm mug of tea and a slice of this cake, and feel all your worries melt away with each bite.
- 12 oz dates pitted and cleaned
- ¼ tsp baking soda
- ¾ warm water
- 1 stick butter
- ¾ cup granulated sugar blended
- 3 eggs
- 1 tsp vanilla paste
- 1½ cups all purpose flour
- ¼ cup roasted semolina
- ¼ tsp nutmeg
- ¼ tsp clove powder
- 1 tsp cinnamon powder
- ¼ tsp salt
- 1 tsp baking powder
- ⅓ cup cashews chopped
In a bowl, add the ¾ cup warm water and mix in the baking soda. Then add in the dates, they should be completely covered. Allow to soak for about 1 hour. Set aside.
Preheat oven to 325F. Grease and line an 8x8" square baking tray with parchment paper.
Cream together butter and blended sugar (consistency should be like powdered sugar) until light and fluffy. Add in the eggs one at a time, beating well after each addition. Beat in the vanilla paste.
Add the flour, roasted semolina, nutmeg, clove powder, cinnamon powder, salt, and baking powder. Beat until incorporated.
Blend the soaked dates with its water and baking soda into a fine paste. Mix the date paste and chopped cashews into the flour mixture by hand.
Bake for 50-60 minutes or until cake is golden brown and springs back when touched in the center. Top with caramel sauce and chopped cashews and enjoy!
