White Chocolate Coconut Cake

This delightful loaf cake combines the creamy richness of white chocolate with the tropical flair of coconut, resulting in a moist and flavorful cake that’s perfect for any occasion!

Ingredients
  

Cake:

  • ½ cup unsalted butter softened
  • ¾ cup sugar
  • 2 eggs
  • 1 egg white
  • cup Coconut Milk
  • ¼ cup yogurt
  • 1 tsp vanilla
  • ½ cup white chocolate melted
  • cups flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • ½ tsp salt

Frosting:

  • ¼ cup unsalted butter
  • 4 oz cream cheese
  • cups powdered sugar
  • Shredded Coconut for sprinkling

Instructions
 

  • Preheat oven to 325F. Butter and flour a loaf pan. Set aside.
  • In a medium sized bowl, add the butter and sugar and beat with a whisk until light and fluffy about 3 minutes. Whisk in the eggs and egg whites until incorporated.
  • With the mixer low, add the coconut milk, melted chocolate, yogurt, and vanilla. Once incorporated, add in the flour, baking powder, cornstarch, and salt. Don’t over mix.
  • Pour into the prepared pan and bake for about 50-60 minutes or until a toothpick comes out clean. Allow the cake to cool completely on a wire rack before removing from pan.
  • For the frosting: In a medium sized bowl, beat together the butter, cream cheese, and powdered sugar with a hand whisk until smooth.
  • Spread the frosting on top of the cooled cake and sprinkle with desiccated coconut, enjoy!
