Let’s get started!
For the hot chocolate, bring to a simmer the milk, heavy cream, sugar, salt, cocoa powder, and chocolate chips. Remove from heat and set aside.
For the marshmallow cream: Fill a large pot with 2″ of water and bring to a boil. Add a heatproof bowl on top and add the egg whites, cream of tartar, and sugar. Stir constantly until there are no granules of sugar, it should reach 160F.
Transfer the syrup mixture to the bowl of a stand mixer fitted with the whisk attachment and add the vanilla. Beat until fluffy about 5-10 minutes. Add to a piping bag. Set aside.
Assemble: pour the hot chocolate into a mug of your choice. Pipe a thick line of marshmallow cream along the rim of the mug, using a small blowtorch carefully torch the cream until lightly browned.
Dip some graham crackers and enjoy!
Sure it takes a little bit of arm work but it’s SO worth the time! And if you’re in a pinch, you can simply use store brought marshmallow fluff instead.

- ⅔ cup chocolate chips
