Preheat oven to 375F. Line baking sheets with parchment paper and set aside.
In a medium bowl, beat together butter and sugars until fluffy. Beat in eggs and vanilla. Mix in the flour, baking soda, baking powder, and salt until just combined.
Add your choice of chopped chocolate— I used Kinder Chocolate cut into 1/4″ pieces. Mix the into the cookie dough.
Shape approx. 60 grams of cookie dough into tall balls and place on your prepared cookie sheets.
Bake for about 8-10 minutes, or until a light golden brown. Be careful not to over bake them!
Remove from oven and immediately press in the chocolate to the top of each cookie. Allow another 10 minutes on the tray before removing to a cooling rack.
Enjoy warm with a glass of milk! These will keep fresh for up to a week in an airtight container at room temperature!
