Chocolate Chip Muffins

These bakery style chocolate chip muffins are the perfect start to your day— they're soft, fluffy, and packed with just the right amount of chocolate chips!

Ingredients
  

  • 8 tbsp unsalted butter melted
  • 1 cup buttermilk
  • 2 eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla paste
  • cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions
 

  • Preheat the oven to 425F.
  • In a large bowl, whisk together the melted butter, buttermilk, eggs, sugar and vanilla. Whisk in the flour, baking powder, baking soda, and salt until there are no lumps and you have a smooth batter. Fold in the chocolate chips.
  • Line a muffin tray with 12 cupcake liners and divide the batter evenly. Bake at 425°F for 5 minutes. Then reduce the oven temperature to 375°F and continue to bake for another 13-15 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool for about 5-10 minutes and enjoy warm with a glass of milk or tea!
