Today we’re making something thatβs guaranteed to make your mornings a little brighter: chocolate chip muffins. A warm, freshly baked muffin, with a golden crust and a center that melts in your mouth, what more could you want? I canβt wait for you to taste theseβtheyβre a little bit of joy in every bite!
You know what’s even better than a batch of fresh, homemade muffins? When the cleanup is just as easy. For these muffins all you need is a single bowl and a whisk, and you’re all set!
Let’s get baking!
Preheat the oven to 425F.
In a large bowl, whisk together the melted butter, buttermilk, eggs, sugar and vanilla. Whisk in the flour, baking powder, baking soda, and salt until there are no lumps and you have a smooth batter. Fold in the chocolate chips.
Line a muffin tray with 12 cupcake liners and divide the batter evenly. Bake at 425Β°F for 5 minutes. Then reduce the oven temperature to 375Β°F and continue to bake for another 13-15 minutes or until a toothpick inserted into the center comes out clean.

Ingredients
- 8 tbsp unsalted butter melted

- 2 eggs
- 1 cup granulated sugar
- 1 tsp vanilla paste
- 2Β½ cups all-purpose flour
- 2 tsp baking powder
- Β½ tsp baking soda
- ΒΌ tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 425F.

- Line a muffin tray with 12 cupcake liners and divide the batter evenly. Bake at 425Β°F for 5 minutes. Then reduce the oven temperature to 375Β°F and continue to bake for another 13-15 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for about 5-10 minutes and enjoy warm with a glass of milk or tea!
