In a large pot over medium heat, add the potatoes and salt, cover with water just until the potatoes are submerged. Bring to a boil until the potatoes are soft and tender, 15-20 minutes. Check for doneness with a fork. Drain the water from the potatoes.
Preheat oven to 400F and line a baking sheet with parchment paper. Place the potatoes on your tray about 2" apart. Using the bottom of a flat glass, press down on each potato until flat.
Brush with the melted butter, follow with a drizzle of olive oil, a sprinkling of salt, oregano, and thyme!
Bake for 25-35 minutes, then sprinkle on the parmesan cheese and bake for another 5 minutes.
Remove from oven and enjoy warm (that's when they're perfectly crispy)!
