Goat Cheese and Onion Pinwheels
These puff pastry pinwheels are the perfect treat! The creamy, tangy goat cheese pairs perfectly with the sweet, savory onion jam, all wrapped up in buttery, flaky pastry for a seriously delicious snack.

Onion Jam:
- ¼ cup extra-virgin olive oil
- ½ tsp crushed chili
- 3 large sweet onions ¼" diced
- 1 tsp salt
- 2 sprigs parsley
- 2 bay leaves
- 1 sprig rosemary
- ¼ cup white sugar
- ¼ cup brown sugar
- ¼ cup water
- ¼ cup apple cider vinegar
Pinwheels:
- Puff Pastry Squares
- Onion Jam
- Goat Cheese
- Cheddar Cheese
- Italian Seasoning
- 1 egg beaten
Onion Jam
Heat oil in a large skillet over medium-high heat, add the crushed chili. Follow with the onions and salt; and cook until brown, 10 to 12 minutes. Add the parsley, bay leaves, and rosemary and give it another stir.
Add both sugars, water, and apple cider vinegar and allow mixture to come to a boil. Reduce heat to low; and cover, stirring occasionally, until onions are sitting in a small pool of liquid, about 30 minutes. Turn off the stove and set aside, allow to cool.
Puff Pastry Pinwheels
Preheat oven to 375F and line two large baking trays with parchment paper, set aside.
Place a puff pastry square on a plate and cut each corner edge. Add some onion jam, dot with goat cheese, sprinkle with cheddar cheese, and dust with italian seasoning. Fold each edge as shown in the video and then brush with the beaten egg.
Bake for 20-25 minutes or until golden brown. Remove from oven and allow to cool before transferring to a wire rack. Enjoy fresh!
