I always end up eating a few straight out of the oven, before they even cool down. The flaky, buttery pastry just makes everything even better—it’s the kind of snack I could eat every day. Seriously, I make them for get-togethers, but I always end up eating most of them myself.
Let’s get started!
Heat oil in a large skillet over medium-high heat, add the crushed chili. Follow with the onions and salt; and cook until brown, 10 to 12 minutes. Add the parsley, bay leaves, and rosemary and give it another stir.
Add both sugars, water, and apple cider vinegar and allow mixture to come to a boil. Reduce heat to low; and cover, stirring occasionally, until onions are sitting in a small pool of liquid, about 30 minutes. Turn off the stove and set aside, allow to cool.
Preheat oven to 375F and line two large baking trays with parchment paper, set aside. Place a puff pastry square on a plate and cut each corner edge. Add some onion jam, dot with goat cheese, sprinkle with cheddar cheese, and dust with italian seasoning.
Fold each edge as shown in the video and then brush with the beaten egg.
Bake for 20-25 minutes or until golden brown. Remove from oven and allow to cool before transferring to a wire rack. Enjoy fresh!
