Rasmalai Hot Chocolate

Rich, creamy, and gently spiced with cardamom and saffron, this hot chocolate is the perfect indulgence for chilly evenings or when you’re craving something comforting with a twist! This is what happens when a cozy cup of cocoa meets your favorite Indian dessert. Magic.

One quiet evening, with the weather turning cool and the kitchen lights glowing, this drink came together almost by instinct. I’ve never really been a fan of the actual rasmalai pieces but the sweet milk? I can drink that by the gallon, so why not turn it into a hot chocolate that’s perfect for the chilly weather?

Let’s get started!

In a medium sized saucepan over low heat, add the whole milk and saffron threads. Crush the cardamon pods slightly so the seeds are exposed, then add to the pot. Mix to combine. Allow to simmer for 8 minutes before removing from heat. The mixture should be reduced and yellow in color.

Pick out the cardamom pods and immediately mix in the heavy cream and white chocolate until smooth.

In a small bowl, whisk together the heavy cream and sugar with a hand frother until smooth. Pour the hot chocolate into a mug of your choice, top off with the cream.

Add a few strands of saffron and enjoy!

Ingredients
  

Hot Chocolate

  • 1 cup milk
  • 3 cardamom pods
  • pinch of saffron
  • 5 oz heavy cream
  • ¼ cup white chocolate

Topping

  • 2 tbsp heavy cream
  • 1 tsp sugar

Instructions

  • In a small bowl, whisk together the heavy cream and sugar with a hand frother until smooth.
  • Pour the hot chocolate into a mug of your choice, top off with the cream and a few strands of saffron! Enjoy!
