Mango Coconut Mocktail
This refreshing drink pairs juicy, sweet mango with a shot of coconut milk— giving it a rich, velvety texture that’s just dreamy.
For the syrup
- ½ cup fresh mint leaves
- 1 cup sugar
- 1 cup water
For the mocktail
- ⅓ cup mango puree
- 2 tbsp mint syrup
- 2 tbsp Thai Kitchen coconut milk
- San Pellegrino sparkling water
- ice
For the syrup
In a small pot, crush the mint leaves. Add sugar and water and bring to a boil, stirring constantly. Boil for 3 minutes. Remove from heat and allow to cool to room temperature. Strain out the remaining leaves and set aside.
