I’ve always been a fan of mangoes and coconut, and combining them into a mocktail was my way of bringing a little bit of paradise to my everyday life. It’s incredibly refreshing and perfect for when you need a break from the ordinary!

Add the mango puree to a glass of your choice and add the mint syrup and coconut milk and mix well. Add your preferred amount of ice to each glass and top off with sparkling water!

Mango Coconut Mocktail
Ingredients
For the syrup
- ½ cup fresh mint leaves
- 1 cup sugar
- 1 cup water
For the mocktail
- ⅓ cup mango puree
- 2 tbsp mint syrup
- 2 tbsp Thai Kitchen coconut milk
- San Pellegrino sparkling water
- ice
Instructions
For the syrup
- In a small pot, crush the mint leaves. Add sugar and water and bring to a boil, stirring constantly. Boil for 3 minutes. Remove from heat and allow to cool to room temperature. Strain out the remaining leaves and set aside.
For the mocktail
- Add the mango puree to a glass of your choice and add the mint syrup and coconut milk and mix well. Add your preferred amount of ice to each glass and top off with sparkling water! Enjoy!
