Persimmon, Goat Cheese, and Pomegranate Salad

This vibrant salad is a delightful mix of sweet, savory, and tangy flavors. Fresh, ripe persimmons pair perfectly with creamy goat cheese, a tangy pomegranate dressing, and sweet dried cranberries.

Ingredients
  

Salad

  • 2-3 persimmons
  • ¼ cup goat cheese
  • ¼ cup dried cranberries
  • 2 tbsp grated parmesan
  • fresh basil

Pomegranate Dressing

  • 3 tbsp pomegranate juice
  • 2 tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • pinch of black pepper

Instructions
 

  • In a small bowl, mix together the pomegranate juice, olive oil, vinegar, honey, and black pepper. Set aside.
  • Cut your persimmons into thin slices and lay out on a plate. Crumble up the goat cheese and add on top along with the cranberries and basil. Drizzle on the pomegranate dressing and grate some parmesan on top!
