In a small bowl, mix together the pomegranate juice, olive oil, vinegar, honey, and black pepper. Set aside. Cut your persimmons into thin slices and lay out on a plate. Crumble up the goat cheese and add on top along with the cranberries and basil.
Drizzle on the pomegranate dressing and grate some parmesan on top!

This vibrant salad is a delightful mix of sweet, savory, and tangy flavors. Fresh, ripe persimmons pair perfectly with creamy goat cheese, a tangy pomegranate dressing, and sweet dried cranberries.
Ingredients
Salad
- 2-3 persimmons
- ¼ cup goat cheese
- ¼ cup dried cranberries
- 2 tbsp grated parmesan
- fresh basil
Pomegranate Dressing
- 3 tbsp pomegranate juice
- 2 tbsp olive oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- pinch of black pepper
