Quick and Easy Apple Cake

This easy apple cake is the perfect treat for fall! It's moist, tender, and filled with chunks of sweet apple and the just the right amount of spices to leave you craving for more.

Ingredients
  

  • 2 eggs
  • ¾ cup sugar
  • ½ tsp vanilla paste
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • tsp salt
  • ½ tsp cinnamon powder
  • ¼ tsp nutmeg
  • 8 tbsp unsalted butter melted
  • 3 large apples

Instructions
 

  • Preheat oven to 350F. Grease a round baking pan with butter and line with parchment paper, set aside.
  • Peel, core, and chop the apples into 1" chunks. Set aside.
  • Whisk together the eggs and sugar until foamy. Whisk in the vanilla. Sift in the flour, baking powder, salt, cinnamon powder, and nutmeg. Beat until there are no lumps. Beat in the melted butter until you have a smooth batter.
  • Fold in the apple pieces with a rubber spatula and pour into the prepared baking pan.
  • Bake for about 40-45 minutes or until the top is golden brown and a toothpick inserted into the middle comes out clean.
  • Serve warm with a scoop of ice cream or enjoy cold the next day!
