Quick and Easy Apple Cake

This easy apple cake is the perfect treat for fall! It's moist, tender, filled with chunks of sweet apple and just the right amount of spices to leave you craving for more.

Welcome back! I’m excited to share a recipe that’s as warm and comforting as a hug on a chilly day: apple cake.

Imagine the scent of cinnamon and fresh apples filling your kitchen, a promise of a delicious treat to come. This cake is everything you’d want in a fall dessert, with a tender crumb, sweet apple chunks, and just the right amount of spice. The best part? It’s incredibly easy to make and only uses one bowl, really!

Let’s get baking!

Preheat oven to 350F. Grease a round baking pan with butter and line with parchment paper, set aside.

Peel, core, and chop the apples into 1″ chunks. Set aside.

Whisk together the eggs and sugar until foamy. Whisk in the vanilla. Sift in the flour, baking powder, salt, cinnamon powder, and nutmeg. Beat until there are no lumps. Beat in the melted butter until you have a smooth batter.

Fold in the apple pieces with a rubber spatula and pour into the prepared baking pan.

Bake for about 40-45 minutes or until the top is golden brown and a toothpick inserted into the middle comes out clean.

Serve warm with a scoop of ice cream or enjoy cold the next day!
