Buttery, melt-in-your mouth scottish shortbread cookies that are as easy to make as they are delicious! The secret to the perfect cookie is all in the butter.
Preheat oven to 375F. Grease and line a 8x8" baking pan with parchment paper. Set aside.
Beat together the butter, sugar and salt until just combined (not creamy/fluffy). Then whisk in the flour, when there are no streaks of flour remaining, set aside the beater and combine the mixture into a dough ball using your hands or a spatula.
Place into your prepared pan and carefully press down until the pan is covered in an even layer of cookie dough. Cut into desired size. Bake for around 25-30 minutes or until lightly browned. Remove and sprinkle with granulated sugar. Allow to cool.
Serve with a cup of tea and enjoy!
