Shortbread Cookies

Buttery, melt-in-your mouth scottish shortbread cookies that are as easy to make as they are delicious! The secret to the perfect cookie is all in the butter.

Ingredients
  

  • 2 sticks unsalted butter* room temperature
  • ½ cup sugar
  • ½ tsp salt
  • cups all purpose flour

Instructions
 

  • Preheat oven to 375F. Grease and line a 8x8" baking pan with parchment paper. Set aside.
  • Beat together the butter, sugar and salt until just combined (not creamy/fluffy). Then whisk in the flour, when there are no streaks of flour remaining, set aside the beater and combine the mixture into a dough ball using your hands or a spatula.
  • Place into your prepared pan and carefully press down until the pan is covered in an even layer of cookie dough. Cut into desired size. Bake for around 25-30 minutes or until lightly browned. Remove and sprinkle with granulated sugar. Allow to cool.
  • Serve with a cup of tea and enjoy!
