Scottish Shortbread Cookies

Buttery, melt-in-your mouth scottish shortbread cookies that are as easy to make as they are delicious! The secret to the perfect cookie is all in the butter.

There’s something incredibly comforting about the smell of fresh-baked cookies wafting through the house. These simple yet irresistible treats have a buttery, melt-in-your-mouth texture that makes them perfect for any occasion. The best part? They’re incredibly easy to make, and you probably have most of the ingredients in your pantry already!

Let’s get baking!

Preheat oven to 375F. Grease and line a 8×8″ baking pan with parchment paper. Set aside.

Beat together the butter, sugar and salt until just combined (not creamy/fluffy). Then whisk in the flour, when there are no streaks of flour remaining, set aside the beater and combine the mixture into a dough ball using your hands or a spatula.

Place into your prepared pan and carefully press down until the pan is covered in an even layer of cookie dough.

Cut into desired size and score the holes with a fork. Bake for around 25-30 minutes or until lightly browned. Remove and sprinkle with granulated sugar. Allow to cool.

Serve with a cup of tea and enjoy!

  • 2 sticks unsalted butter* room temperature
  • ½ cup sugar
  • ½ tsp salt
  • cups all purpose flour

Instructions

* I use Kerrygold's Pure Irish Butter, Unsalted, it enhances the flavor of your cookies and give them that perfectly rich, buttery taste!
