Loaded Baked Potato with Smoked Cheese and Fried Salmon

Okay, here we go!

It’s nerve wracking writing the first post on a brand new website and I’ve written this introduction nearly a hundred times by now. 

But hi there! Most of you know probably know me from my Instagram, where I talk about food, books, and video games! A lot of you have been asking for recipes for awhile now and it was the fire I needed to get this started. These loaded potatoes were by far the most requested, which is why I’m starting my blog off with this, but I’ll definitely be adding more! So be sure to stop by again 🥺

Without further ado, let’s go make some potatoes!

Potatoes are hands down one of my favorite vegetables— there are so many things you can do with them and they always turn out delicious and bursting with flavor! Boil ’em, mash ’em, stick ’em in a stew. Ahem. 

With the help of my mom, because I don’t know the first thing about cooking, I think this loaded potato recipe is ready for sharing. Creamy potato? Juicy, fried salmon? Delicious smoked cheese? Yes, yes, and triple yes. 

Let’s get down to business, shall we? 

First up! Oil and salt your potatoes and stick them in the oven. While they’re baking, you’re going to want to start on the salmon. We’re going for the perfect balance of crispiness on the outside and juicy, creaminess on the inside.

When your potatoes are done, it’s time to half them lengthwise and spoon out the insides. It’s important to hollow out your potatoes while they’re still warm and soft but not too hot to burn your hands 🙁

Make sure to leave a thin lining of potato on the skin for support and if the skin breaks, no worries! You can put Humpty Dumpty together again with your potato filling.  

Now, we’ll mix together the prepared salmon, shredded cheese (I’m personally not a big fan of cheese, but smoked gouda is SO good), milk, parsley, chives (the fresher the better), and softened butter with the scooped out potatoes. 

Fill your potato skins up and top with the leftover salmon and a dash of parsley for color. Pop ’em in the oven, and your potatoes will be ready before you know it!

Loaded Baked Potatoes with Smoked Cheese and Fried Salmon

These baked potatoes are easy to make and packed full of mouth-watering flavors. With smoked gouda cheese, bits of fried salmon, and chives, they're the perfect meal!

Ingredients
  

For Potatoes

  • 3 large russet potatoes
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper

For Salmon Bits

  • 1 cup salmon chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • ¾ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp ginger grated
  • season to taste

For Potato Filling

  • 1 cup shredded gouda cheese plus more for topping
  • ½ cup parsley chopped
  • 2 tbsp butter softened
  • ½ cup milk
  • ½ tsp salt
  • ½ tsp pepper
  • chives to serve

Instructions
 

  • Preheat the oven to 350°F/180°C. On a baking sheet, oil the potatoes and sprinkle with salt and pepper. Bake for one hour and twenty minutes. An additional 15 minutes per potato is needed if you’re making more.
  • Meanwhile, cook the chopped salmon with the minced garlic, ginger, seasoning, and olive oil. Stir until fried. Set aside.
  • Once the potatoes are baked, cut them in half and scoop out the insides while still warm, and transfer to a bowl.
  • In the bowl with the scooped out potato, add the cheese, parsley, salmon (leave a little to sprinkle on top), softened butter, milk, salt, and pepper. Mix well. Scoop the potato mixture back into the hollowed-out potatoes and top with gouda cheese and remaining salmon bits.
  • Bake an additional 15 minutes until the cheese is melted. Serve warm with a sprinkle of chives!
