Goat Cheese Brownies with a Dark Chocolate and Raspberry Drizzle

Ah, brownies! Everyone's favorite dessert because of how versatile they are. Have 'em plain or with ice cream, with a dollop of whip cream or better yet, with a creamy layer of goat cheese.

Meet the new love of my life— goat cheese brownies with a dark chocolate and raspberry drizzle. I never thought anything could top the classic brownies or even mint chocolate brownies, but these little guys have changed my mind 🤤

What’s so special about goat cheese, you ask? (You really didn’t but let’s just pretend you did). While it’s fairly similar to cream cheese, it has a much more sharper flavor that works amazing with a fudgey brownie base.

And who doesn’t love brownies?

We’ll start with the brownie base. Gather your ingredients and preheat the oven to 325°F. Line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides to lift the completed goat cheese brownie out with ease. In a bowl, sift together the flour, cocoa, and salt. Set aside.

Melt the butter and chocolate together before adding in the granulated sugar, mixing until smooth. Whisk, whisk, whisk! Allow the chocolate to cool to room temperature before continuing.

Add in the eggs one at a time, mixing well after each addition until batter is thick and shiny—about 2 minutes. You’re going to need all your arm strength for this! 💪

Whisk in the goat cheese and vanilla extract until there are no clumps or pieces.

Finally, whisk the flour mixture into the batter until everything is combined. Pour the batter into the prepared pan and bake for around 40-45 minutes or until a toothpick inserted into the center comes out clean. Remove from pan and allow to cool completely on a wire rack.

While the brownie base bakes, let’s get started on the goat cheese layer! In a bowl, beat together the butter, goat cheese, and vanilla extract with a hand mixer until light and fluffy. Add the powdered sugar and beat on low speed until everything is incorporated— about 1 to 2 minutes.

If you’re not using the goat cheese layer right away (depending on when you make it), set aside in the refrigerator to prevent it from becoming runny.

When the brownie base has cooled, spread the goat cheese layer evenly on top. Refrigerate for about half an hour to allow them to set before cutting into bars—or squares, if you prefer! Drizzle melted chocolate and raspberry jam on top before serving!
