Let’s make some cake!
Preheat oven to 325F. Butter and flour a loaf pan. Set aside. In a medium sized bowl, add the butter and sugar and beat with a whisk until light and fluffy about 3 minutes. Whisk in the eggs and egg whites until incorporated.
With the mixer low, add the coconut milk, melted chocolate, yogurt, and vanilla. Once incorporated, add in the flour, baking powder, cornstarch, and salt. Don’t over mix.
Pour into the prepared pan and bake for about 50-60 minutes or until a toothpick comes out clean. Allow the cake to cool completely on a wire rack before removing from pan.
Let’s assemble!
When the cake is ready, beat together the butter, cream cheese, and powdered sugar until smooth. Spread atop the cake and sprinkle with desiccated coconut.

White Chocolate Coconut Cake
Ingredients
Cake:
- ½ cup unsalted butter softened
- ¾ cup sugar
- 2 eggs
- 1 egg white
- ⅓ cup Coconut Milk
- ¼ cup yogurt
- 1 tsp vanilla
- ½ cup white chocolate melted
- 1½ cups flour
- 1 tbsp cornstarch
- 1 tsp baking powder
- ½ tsp salt
Frosting:
- ¼ cup unsalted butter
- 4 oz cream cheese
- 1½ cups powdered sugar
- Shredded Coconut for sprinkling
