In a large pot, whisk together egg yolks, sugar, salt, and cornstarch until lump free. Whisk in the milk and heavy cream.
Place pot over medium-high heat, whisking constantly, until it begins to thicken. Cook while whisking for an additional minute or two. Remove from heat and stir in the butter and vanilla.
Transfer to a container and press a sheet of plastic wrap onto the surface to prevent a skin from forming. Chill in the refrigerator until firm.
You can use this for a fruit custard, in pastries/donuts, to layer cakes, or even spread it on toast!
