Easy Smashed Potatoes

Ready to make the perfect side dish? Crispy on the outside, creamy on the inside, and topped with savory parmesan, they’re a quick, flavorful way to elevate any meal with minimal effort!

I’ve always been a fan of potatoes in any form, but there’s something about these easy smashed potatoes with parmesan that just hits the spot every time. I first tried making them on a whim, craving something crispy yet creamy, and it quickly became one of my favorite go-to recipes.

 

The process is so simple: boil the potatoes, smash them lightly, and pop them in the oven to get that perfect golden crunch. The best part? A generous sprinkle of parmesan on top as they come out, creating this irresistible savory flavor.

Let’s get started!

In a large pot over medium heat, add the potatoes and salt, cover with water just until the potatoes are submerged. Bring to a boil until the potatoes are soft and tender, 15-20 minutes. Check for doneness with a fork. Drain the water from the potatoes.

Preheat oven to 400F and line a baking sheet with parchment paper. Place the potatoes on your tray about 2″ apart. Using the bottom of a flat glass, press down on each potato until flat.

Brush with the melted butter, follow with a drizzle of olive oil, a sprinkling of salt, oregano, and thyme!

Bake for 25-35 minutes, then sprinkle on the parmesan cheese and bake for another 5 minutes.

Remove from oven and enjoy warm (that’s when they’re perfectly crispy)!

This pairs well with almost anything: a juicy steak, roasted chicken, or even just a fresh salad.

  • 2 tsp salt
  • 4 tbsp melted butter
  • 2 tbsp olive oil
  • sea salt
  • black pepper
  • dried oregano
  • dried thyme
  • ¼ cup shredded parmesan

Instructions
