Caramelized Banana Fritters

These banana fritters come together with just a handful of ingredients, but taste like pure comfort. Soft, banana-rich centers, crisp golden edges, and a warm brown-sugar caramel that soaks right in—they’re quick, perfect, and almost impossible to stop eating.

These banana fritters are the kind of dessert that feels almost too easy for how wildly good they taste. You start with ripe bananas—so soft they practically mash themselves—mix them into a simple batter, and drop spoonfuls into hot oil until they puff into golden little pillows. While they’re still warm, they take a quick bath in a glossy brown-sugar caramel that clings to every nook and craggy edge.

The result is a fritter that’s crisp on the outside, tender and banana-rich inside, and coated in just the right amount of sticky sweetness. They’re cozy, nostalgic, and dangerous in the best possible way—because once you make them, they’re going to become your go-to “I need something warm and sweet right now” recipe.

Let’s get started!

In a medium-sized bowl, add the bananas and mash with a fork until liquidy. Add the brown sugar, baking powder, salt, and flour and give it a good whisk until smooth.

Heat oil in a deep fryer to 375F. Carefully drop spoonfuls of the batter into the hot oil—taking care not to splash! Fry each fritter until golden, about 1½ mins, flip over and fry the other side, another 1½ mins.

Transfer to a cooling rack.

For the caramel syrup, simply add the brown sugar and water to a pot over medium low heat and cook for 5 minutes, stirring occasionally. While the fritters are still warm, drop into the prepared caramel sauce and allow to soak.

Enjoy warm with a dusting of powdered sugar!

Caramel Sauce

  • ½ cup brown sugar
  • ½ cup water

Banana Fritters

  • 4 ripe bananas
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup flour

Caramel Syrup

  • For the caramel syrup, simply add the brown sugar and water to a pot over medium low heat and cook for 5 minutes, stirring occasionally.
