As you bite into it, you get this warm, melt-in-your-mouth softness from the banana bread, with just the right hint of coffee giving it an addicting depth of flavor. The edges are perfectly crisp, the inside is soft and fluffy, and a drizzle of maple syrup or a dusting of powdered sugar? Pure heaven. Honestly, this is the kind of breakfast you’ll dream about long after the last bite.
Let’s get started!
In a microwave safe cup, add the heavy cream and microwave for 10 seconds, remove and mix in the instant coffee until smooth. In a large bowl, add the eggs, sugar, salt, and coffee heavy cream and mix until smooth.
Melt a slice of butter on a frying pan over medium heat. Add the banana bread slices to the milk mixture and allow to soak until saturated. Cook the bread on the pan until golden brown on both sides.
Transfer to a plate and finish off with a drizzle of syrup, enjoy warm!
